Turkey Waldorf Salad
This is a salad you can prepare quickly and easily with a little bit of leftover cooked turkey pieces from another meal. Low calorie and nutritious this salad provides a fair amount of protein and dietary fiber per serving along with great taste. Each serving has about 246 calories with 14 grams of protein and 4 grams of fiber and is chock full of vitamins and minerals.
The original Waldorf salad recipe is made with celery, apples, walnuts, and mayonnaise. I’ve added the extra ingredients for additional flavor and nutrition. Serve this dish along with a low calorie whole grain muffin and non fat milk or fortified nondairy drink such as soy milk for some added calcium and protein.
Turkey Waldorf Salad
Makes 4 servings
Ingredients:
1 cup chopped cooked turkey
1/2 cup craisins
1 medium crisp red apple cored and chopped
1/2 cup celery chopped
3/4 cup seedless grapes
2 Tbsp. raisins
1/4 cup chopped walnuts
1/2 container low fat vanilla yogurt (such as Stonyfield Farms) - about 3 oz.
1 Tbsp. freshly squeezed lemon juice
1 Tbsp. light mayonnaise
4 cups of washed and stemmed spinach leaves or mixed lettuce greens.
Directions:
1. Combine turkey, craisins, apple, celery, grapes, raisins, and walnuts.
2. Mix the vanilla yogurt together with the lemon juice and light mayonnaise. Toss with the turkey mixture. Chill for a couple of hours if desired.
3. Serve over a bed of spinach leaves or mixed greens.
